Be careful. Even though we're hoping his manners will be much improved at his new haunt (although a little clean-cut drama never hurt anyone), we're hoping his culinary mastery will be more of the same. Fancy a bit of meat? Think braised pig's head, tongue and trotter, pork belly and celeriac purée – all presented like a platter of Pop Art.
