Burger or lobster? Chicken or steak? Scaled back menus may have dominated the restaurant scene for the past few years, but the days of minimal choice are numbered. Say hello to DIY dining, where diners and chefs collaborate on highly customised menus and experiences.

We noticed the tables starting to turn with Marylebone newcomer CANVAS. Headed up by Swiss chef Michael Riemenschneider, diners are spoiled for choice. Guests construct their own tasting menus – choosing between three to ten courses, with as many starters, mains and desserts as they wish – from a selection of 16 dishes. Expect seasonally-inspired fare like pigeon with chocolate and beetroot or coley with razor clams, grapes and saffron. As for the drinks, with a little help from the head sommelier, wine flights can be tailored to match the tasting menu.
Food truck turned restaurant Pitt Cue Co. is getting in on the action, too. They've just launched Sunday Night Feasts, where the restaurant is available for exclusive hire- but this isn't your normal banquet. Instead of just choosing from a set menu, guests can pick their own produce, influencing the menu from farm to fork. For seated dinners (available for 16 people), head chef Tom Adams will liaise with diners to formulate a six-course menu based on what's available at the Pitt Cue Co. farm and butchers. It's bespoke and seasonal: think dishes like sticky pork St. Louis ribs or smoked saddleback loin chop.
DIY dining is also taking off in New York. Last month, the city's first customisable sushi restaurant Pink Nori opened its doors, inviting diners to create their own sushi rolls. With a mix of classic Japanese ingredients and non-traditional fare (truffle oil or guacamole, anyone?), it's all about mix and match. Seared salmon with onion aioli, Cajun spiced tuna with panko crumbs and avocado, or steamed crab with eel sauce…the possibilities are endless.
