| Head Chef Shake-Up | | | | Here at UJ we’ve noticed there’s a shuffle going on. We love checking out a new restaurant opening, but sometimes it’s even more exciting when an old favourite gets a revamp from a young gun chef, and that’s what’s happening right now. Read on…
| | First up, we heard that Chris Leach was taking up residence under the arches as Head Chef at Sager + Wilde on Paradise Row, replacing Sebastian Myers (Chiltern Firehouse, Faviken and Viajante). Leach used to head up kitchens at Kitty Fisher’s, Pitt Cue and Launceston Place, so it’s an understatement to say we were excited to try his new menu. After a mid-week visit, we can confirm his no-nonsense menu of wood-fired meat, seasonal sides and well-curated wine doesn’t disappoint. The devils on horseback are worth going to hell for.
So, that leaves Mayfair’s favourite celebrity haunt Kitty Fisher’s without a head chef. That’s where George Barson, whose previous appointments include Dinner by Heston and also Viajante (it’s a small world), steps in. Kitty Fisher’s built its culinary reputation around Leach’s simple, wood-fired style (the Galician beef remains, don’t worry) but Barson brings an upscale edge with Devon crab and smoked crème fraiche, Cornish pollock and smoked mussel butter, and herring with piccalilli and dill salt.
Finally, an institution re-launches at the end of this month as renowned French chef Claude Bosi takes the reigns at Bibendum. Bosi earned his stripes with Alain Passard and Alain Ducasse, and owned the two-Michelin-starred Hibiscus in Mayfair until recently. Both the interior and the menu are getting an overhaul, but some of the old favourites will stay; the Conran chairs, the floor-to-ceiling windows and the famed roast chicken remain, but there will be an element of French flair from the flamboyant chef. What was that about old dog, new tricks again?
