If you want refined food from promising young chefs at a (very) decent price – there’s only one way to do it, and that’s to seek out some under the radar supper clubs. Make sure you book in for Panhandle in Dalston on Saturday 16th June, a collaborative effort between St. John sous chef Felix, Noble Rot front-of-house Max and their charismatic (ex pop star) host Niall. What to expect? High end food without the frills – which of course draws on Fergus Henderson’s simple, nose-to-tail ethos – but using a broader selection of ingredients and techniques. The menu for this event hasn’t been released yet, but highlights from last time include crispy tripe with raspberry, chilli, raddichio and cured cod loin wrapped with nduja in fermented January king cabbage.
The ticket price is £40, which includes 5 courses, plus (generous) wine pairings from Max, and all proceeds go to the Unity Project. Good food for a good cause with a great atmosphere? We’re in.
