Heddon Street better be ready for a party. Barrafina alumi Nieves Barragan and business partner José Etura  are behind the street’s latest opening, Sabor, complete with a bar and upstairs to offer diners three distinct incarnations of Spanish cuisine. Working with Michaelis-Boyd, Nieves and José have taken their love for traditional Spanish restaurants and tapas bars and woven this into the already historic surroundings of Heddon Street. Inside, it’s about high ceilings, worn timber floors and Andalucían tiles. Menu-wise, expect to be impressed. An in-house fishmonger prepares and serves fresh seafood ordered by weight from the seafood counter. The menu draws from regional dishes across Spain – Jerusalem artichoke with jamon tortilla and sage alioli, or wild rabbit empanadilla. Don’t miss bar snacks either: start as Sabor means for you to go on with crisp fried chicken oyster bocadillos. Also, it’s worth noting that the restaurant and bar do not take bookings, so get in early. However upstairs, the soon-to-be launched asador will be taking reservations once it has opened later this month, so watch this space.
