The new restaurant in the Gran Hotel Montesol

From the hospitality group that has been thoughtfully expanding into hotels, Sabbaba is the new Ibiza restaurant in the now Experimental Group-owned Gran Hotel Montesol (refurb coming next year, stay tuned). More on this here.

The Décor and Vibe
You know we love bar dining, and they have that here. Wrapped around an open kitchen, the bar would be a great option if you happen to be in Ibiza alone, or just want a quiet night. The atmosphere is upbeat, bright and breezy, and come night, the intimate coves look cosy. Booths, rattan chairs, warm wood, mosaics and neon mix together to create an uplifting space; if the doors to the Vara de Rey are open, there’s also a welcome breeze from the street. The roof, though, is definitely the star: start here for cocktails, views of Dalt Vila and small bites, and make your way leisurely down for dinner.

Food and Drink
A mix of food from Jerusalem and Spain, with dishes that are meant to be shared, this is a great addition to the Ibiza dining scene. Start with some classic Lebanese carbs: hot stone-baked bread with tahini, labneh and zhug, and sesame bagels with za’atar.

Small plates like corvina tartar with watermelon, cucumber and feta, eggplant bravas (a nice fusion) with aioli, seared calamari with lima bean cream, and kohlrabi with mozzarella, burnt chimichurri and sumac are interesting, and there are some classics like boquerones and croquetas. Splurge for caviar on blinis with labneh crème fraîche.

There are also hot dishes (duck, sirloin, mushrooms and ricotta), and robata dishes like lamb chops with honey and spring onion, Iberian pork with capers and anchovies, whole lobster with orange and almond butter, as well as vegetables like cucumber with white miso, lime and cashew cream.

Highlights
The roof! Views like this are hard to come by in Ibiza, especially for rooftop dining. This is going to be a special spot when they relaunch the hotel next year. Bring on ‘22.
