Zuma’s back at it again, this time with a new Inko Nito concept headed for London. Touching down on Soho’s Broadwick Street, the new robatayaki specialist will cover 90 diners, with a menu described as ‘Japanese charcoal grilled cooking with a Korean influence’, so look out for beef cheek and spicy Korean miso with pickled daikon and butter lettuce, and bone marrow, smoked soy and garlic toast. Don’t miss the nigaki either: Inko Nito will be topping the roasted nori and sushi rice dish with Dungeness crab, avocado, wasabi tobiko and yuzu mayo. Drinks-wise, a Nori Old Fashioned gets our vote every time, as does the house spritz for warmer months (to time in with Inko’s opening): watermelon, aperol, yuzu and sparkling wine.
