After making a name for himself alongside his brother Ferran with the three Michelin-starred El Bulli in Catalonia, and then Barcelona’s Tickets with a Willy Wonka approach to impeccable tapas, London is Albert’s next stop. Opening at Hotel Café Royal in early November, Cakes & Bubbles has been inspired by Ticket’s La Dolça, with the chef now focusing his attention on Champagne, cava, fizzy wines, waffles, doughnuts, ice creams and handmade chocolates. Marking the first bricks and mortar expansion out of Spain for Albert, expect the truly unexpected here – and we wouldn’t say it unless we meant it: these desserts will defy description.
