What to do when you find yourself living 200 miles from that great Northern institution, the chip shop? Open your own in Finsbury Park, of course. Inspired by his work with Alan Lau and both Britain and Japan’s love of fried food, Neil Gill set about bringing the two not-so-disparate cuisines under one roof. At Gilly’s Fry Bar, chip butties, donburi rice, deep-fried chicken wings, soft shell crab and even Irn Bru (which features in the highball cocktails) find a home.
