Colin Tu established Salvation in Noodles for Dalston and Finsbury Park, but for his latest venture in Notting Hill, he’s got something else up his sleeve. Mam (pronounced“mum”) refers to a Vietnamese fermentation technique that’s found across the menu. The main attraction here, of course, is the custom-made robata grill, where you can order your seekers as part of a banh-hoi platter or as they come. Count us in for pho, but leave room for dessert: ngot is the black sesame ice cream with coconut sago we can’t live without.
