Sardine: rustic, wood-fired cooking by Stevie Parle’s (Rotorino) protégé, Alex Jackson. His first restaurant, it runs the gamut of Provence and Languedoc, plus parts of northern Spain and Italy. Forget fancy foams; this is simple hearty farmhouse cooking: think tomatoes stuffed with veal, baked with cream and tarragon, roasted quail drizzled with olive oil and heavenly apricot and brown butter tarts for dessert.
