The Experimental Group have been busy! Hot off the heels of their Menorca hotel launch (Menorca Experimental), they’re taking over Hotel Montesol in Ibiza town. Here’s what we know so far…
Firstly, this hotel has a great location (Passeig de Vara de Rey), but has never truly created the vibe that we know it’s capable of. With Experimental at the helm, first taking over the bars and restaurants (end of July ’21) and then the hotel in ’22, it should receive a much needed injection of new life! And as it’s on the corner of the port and old town, this could really be an anchor of vibes for Ibiza town.
Secondly, we’ve long been saying that Ibiza could do with a little Palomar, and now it’s happening. Tomer Amedi – who launched the Palomar in LDN – will be the head chef at their new restaurant, Sabbaba Montesol (sister restaurant to Balagan Paris).
Lastly (keep up): their rooftop, if you haven’t been, has 120 seats with great views of Dalt Vila.
They will close after this season for a refurbishment – those 33 rooms needed it – and we can’t wait to see what they do with the place, for ’22.
