The word fusion might feel a bit ‘90s, but there’s a wave of new ‘fusions’ coming through that are feeling very 2019.
First up at Hackney’s Angelina, there’s a daily eight plate Japanese Italian sharing menu including dishes like unagi risotto, burnt soy butter with dashi, black sesame panacotta, and onglet on the hibachi. Five plates for £38, £9 a plate.
At Pachamama East, the new chef John Javier is introducing Chifa, or Cantonese flavours with Peruvian cuisine. Small plates are divided by soil, sea and land, and the menu is constantly changing.
And finally (this one is a bit of a stretch…), a bit of market fare. Over at Vegan Yes it’s all about Korean Italian. We may not like their name, but the dishes – kimchi lasagna and Italko bibimbaps sound, interesting.
