THE GREEN MARKET

Move over kale there’s another leafy green trying to steal the spotlight… cannabis. Four US states have already legalised the plant, and, with a referendum in 2016 with more states set to legalise recreational use, the black market is greening out. Welcome to the green rush: home delivery booked via apps, farm-to-bowl movements and inventive marijuana edibles.

First up, deliveries – now we have tech heads in Silicon Valley turned into ganga-preneurs. Over in San Francisco, the birthplace of Uber, comes Eaze –a high-speed app with choices of different ‘plants’, delivered straight to your door – within 15 minutes. Want something a bit more high-brow? Try Potbox, a monthly subscriptions start up, with all the class of a superior wine service – premium packaging, curated descriptions on genetics, palate and aroma information and, of course, quality guaranteed.

Next, following the post-Goop trend of locally sourced ingredients and farm-to-table movements comes Flow Kana, a farmers’ market by ganga-preneur, Michael Steinmetz, selling fresh fruit, vegetables and weed, all with rustic labels: who grew it, where they grew it and how they grew it. The concept? Farm-to-table cannabis that is organic and grown outdoors – delivered.

Chefs are also getting creative with marijuana edibles and infusions. But forget half-baked brownies. We are talking pork bahn mi, truffle popcorn and tomato soup via Garyn Angel, whose food truck was a driving demonstration on how to infuse plant extractions into fats (oils and butters) and alcohol. More recently, in July in Washington State, District Growers received the first commercial kitchen permit to produce marijuana-infused food. Their first product was cannabis infused cold pressed juice. Apt.
