1. Pop the lime and sugar into a heavy-based tumbler
glass and muddle, crushing them smoothly and briefly together with a
muddler or rolling pin. If there's no crushed ice to hand, muddle the lime and sugar in a shaker tin, then add the cachaça and cubed ice, and shake hard and fast before emptying entire contents into your tumbler. Variations: |

Cachaça, like most spirits, can be flavoured by adding an ingredient (e.g. cinnamon quill, vanilla pod) and leaving for 2-3 days. This can be accelerated by popping the sealed bottle into the dishwasher on a short cycle. Instead of muddling, add all the ingredients into a blender, together with some fresh fruit (e.g. strawberries, melon) and a little ice, to make a 'batida'.
