Back in the day Ollie ran some of London's most scenester venues. However, as heyday hotspots such as Isola and the Atlantic bit the dust, much like his previous establishments, Mr Peyton experienced something of a rebirth. Moving from slick style maven hangouts to our finest English Heritage, Mr Peyton has transformed himself into something of a 21st century renaissance man. Inn the Park sits in the prime spot of St James, while the modestly entitled National Dining Rooms graces one of Britain's foremost galleries. His latest offering, The Wallace, regally resides in the sculpture garden of the Wallace Collection. (We're thinking that Mr Peyton has some friends in very high places.) Diners at The Wallace will be transported into an age of elegance - with silk parasols and placemats and a dramatic glass roof, it's Shaun Clarkson-designed to recreate the feel of a Parisian courtyard. Contemporary French food is executed by the former head chef of L'Oranger and Le Gavroche. Which can only mean one thing: it will be very good. He may have gone from champagne style bars to grandpa friendly locations, but well done to Mr Peyton: going classic is just so now.
