A French canteen celebrating the creation of Absinthe and the artists, writers and philosophers who were inspired by the fabled green liquid, this originally opened as a pop-up but is now one of the best cocktail bars in Dalt Vila. Owner Martin Lavie, who has over 10 years’ experience in Ibiza, sought to bring the bohemian vibe of 30 years ago back to the island – with a spot of humour, thanks to his chalkboard tables and ‘blank canvas’ walls.

Top Tip:
Classic French food – foie gras burgers, entrecote steaks, and moules frites, the house specialty – is served until 2:30am nightly.
