A half-block from the iconic Gastown steam-clock, The Pourhouse is one of Vancouver's premier cocktail destinations. Captained by the famed (and ever be-tied) cocktailian Jay Jones, it's hard to decide what's more impressive: the old-school saloon-style interior (how many bars have a converted old boiler as their beer taps?) or the incredible cocktails. While the list is only half-a-dozen strong, pull up a stool at the bar (which you clearly booked in advance) and let the incredibly talented bar team take you off piste -it's a diversion that'll be thoroughly memorable.
